In line with conversations I've had in the past with people here and elsewhere about 'bread, proper home storage of', I put the two sliced loaves I brought home last week out on the counter instead of putting them into the fridge right away as I always do.

Within a day or two, one of them had developed small spots of mold on some of the slices (on the crust). Being frugal, I cut those bits off those slices and then put both loaves in the fridge immediamente.

The last time I bought a whole loaf from the baker at the farmers' market, I kept it out all week in its paper bag. There was never any sign of mold, but the bread began hardening as soon as I took the first slice off, and by the end of the week it was near rocklike.

Can't win for losing...

I always keep the bread in the fridge - even in winter it seems to mold-up within a couple of days. Blergh.

I want to keep bread in the fridge. I could get away with leaving it out in arid Colorado, but when I lived in humid Philadelphia and here in the UK, I do want to refrigerate it. But our fridges don't tend to as big here in the UK (our kitchen isn't big enough for anything but the ones that fit under the counter), so we leave it out. And try to eat it before it goes off.

I would freeze it. It's easy to thaw bread out, especially if you're toasting it.

I'm surprised about keeping bread in the fridge, it really encourages mold... Breadbins are suprisingly effective, prevent mold but prevent the drying out thing, as does having it in the plastic wrapper commercial loaves come in, paper and crinkly plastic lead to rock hard loaves as you say.

We just had a surprise the other way. Bought a nice loaf of sesame seed bread four or five days ago. We left it in its bag on the counter with about four slices left. I kind of forgot about them, but I looked at them this morning and they are A) still moist and B) show no signs of mold. And it's not that this bread is chock full o' preservatives; it's from the health food store. Melissa attributes this miracle to Vermont being a non-humid place. Long time since I've lived in one of those.
